Breakfast Burrito

Ingredients
Breakfast Sausage | 1 lb | |
Eggs | 10 | |
Salt | ||
Shredded Cheese (any kind) | 8 oz | |
Soft Taco Tortillas | 10 |
Tools:
Small bowl | ||
Paper towels | ||
Medium Mixing Bowl | ||
Whisk (Fork can be used instead) | ||
Saute Pan (Non-Stick Pan or pot works too) | ||
Knife | ||
Spatula | ||
Slatted Spoon (Strainer works too) | ||

Directions:
- Use paper towels to cover the small bowl; set aside. This will be used later to hold cooked sausage.
- Crack eggs into the mixing bowl.
- Use whisk (or fork) to break yolks and stir everything together; set aside.
- Preheat frying pan (or nonstick pot) for 2-3 minutes over high heat.
- Use knife to cut an opening into the breakfast sausage package.
- Use hands to grab small chunks of sausage and drop them into the frying pan, repeat until all sausage is used up.
- Wash hands and use spatula to stir sausage occasionally until it turns brown and starts to crisp up.
- Turn off heat.
- Use slatted spoon (or strainer) to move sausage from pan to the small bowl covered with paper towels; set aside.
- Turn heat back on and set to medium, allow the pan to reheat for a minute or so.
- Add eggs to pan and cook for 5-7 minutes or until eggs firm up, stirring occasionally.
- Turn off heat.
- Return cooked sausage back to the pan.
- Add cheese and use spoon to stir the mixture together until everything is combined well.
- Grab tortilla and wrap a burrito. Each burrito should hold approximately 2 heaping spoon fulls of the egg mixture. Enjoy!
Helpful Tips:
This recipe can be made into tacos instead of burritos to make it easier to serve.
The egg mixture can be refrigerated and reheated later for an easy breakfast that lasts a few days.
Burritos or egg mixture can also be frozen for a quick meal down the road.
Salsa makes a nice addition to this dish.
